Kiwi Teriyaki Steak

Ingredients:

  • 4 California kiwifruit, divided
  • ¼ cup each dry white wine, soy sauce and packed brown sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger root
  • 1 tablespoon vegetable oil (optional)
  • 1½-2 pounds (1 inch thick) boneless round steak

Pare and purėe 2 kiwifruit. Combine with wine, soy sauce, brown sugar, garlic, ginger and oil in large baking dish; add steak and marinate 30 minutes. Remove steak from marinade; broil to desired degree of doneness. Slice steak and arrange on serving platter. Pare and slice remaining 2 kiwifruit; garnish platter with slices. Makes about 6 servings.

Kiwifruit Turkey Roast

Ingredients:

  • 1 California kiwifruit, pared and quartered
  • 3/4 cup orange juice, divided
  • 2 teaspoons lemon or lime juice
  • 1 teaspoon oil
  • 1/8 teaspoon ground ginger
  • Salt
  • 1 (2-1/4 to 2-1/2 lb.) turkey breast half
  • Pepper
  • 2 tablespoons flour
  • 1/2 cup water
  • 1 tablespoon honey
  • 3 California kiwifruit, pared and sliced

Combine quartered kiwifruit, 1/4 cup orange juice, lemon juice, oil, ginger and 1/8 teaspoon salt in food processor or blender; process until smooth. Season turkey breast with salt and pepper, place in glass dish and coat with orange juice mixture. Marinate 30 minutes; turn once. Roast, uncovered, on rack at 325 degrees F. 1 hour and 45 minutes or until internal temperature reaches 185 degrees f. at thickest part of breast. Baste with orange juice marinade every 30 minutes during roasting. Remove turkey and rack from pan. Stir flour into pan drippings. Gradually add water and remaining orange juice. Cook and stir until slightly thickened. Add honey and generous dash pepper. Carve turkey into slices. Serve with gravy; garnish with sliced kiwifruit. Makes about 6 servings.

Variation: Add 2 cups raisins along with other fruit.

Kiwifruit Chicken Saute

Ingredients:

  • 2 chicken breast halves, boned and skinned
  • salt
  • freshly ground pepper
  • ⅛ teaspoon thyme, crushed
  • 1 tablespoon butter or margarine
  • 2 tablespoons white wine
  • 1 California kiwifruit, pared and sliced

Pound chicken between pieces of plastic wrap to flatten to about ¼ inch; sprinkle with salt, pepper and thyme. Heat butter in skillet. Sauté chicken on medium-high about 4 minutes or until cooked and tender; turn once halfway through cooking time. Remove to warm platter and keep warm. Add wine to skillet; cook and stir 2 minutes. Add kiwifruit; cook and stir gently 30 seconds longer. Makes 2 servings.

Pacific Shrimp Salad with Kiwifruit

Ingredients:

  • California kiwifruit peeled and cut into strips
  • Jumbo shrimp cleaned
  • ¼ cup Olive oil
  • 1 tbsp Fresh cracked pepper
  • 1 tsp Sea salt
  • Bacon slices cooked and cut into strips
  • ¼ cup Apricot jam
  • ¼ cup Kiwifruit honey dressing (recipe below)
  • Bibb lettuce (wraps)
  • ¼ cup Fresh cilantro chopped (optional)

Heat frying pan until it becomes hot add oil and shrimp stir constantly adding paper and salt cook shrimp until they become red in color and slightly crunchy (cooking about 2 minutes). Mix apricot jam with kiwifruit honey dressing

Wrap kiwifruit, shrimp, and bacon, spread dressing mixture over lettuce add cilantro to taste and wrap ingredients inside.

KIWIFRUIT HONEY DRESSING

  • California Kiwifruit peeled and chopped
  • ½ cup Honey
  • ½ cup Fresh squeezed limejuice
  • 1 tbsp. Fresh chopped ginger

Combine kiwifruit, honey, limejuice and ginger in a glass bowl and refrigerate for at least 2 hours. Pour over fruit salad or sliced fruit

New Asian Kiwi-Sesame Marinade with Lemongrass

Ingredients:

  • 4 kiwifruit
  • 2 shallots
  • One-quarter cup soy sauce
  • 2 tablespoons ginger
  • 2 tablespoons garlic
  • 2 tablespoons lemongrass
  • 1/4 cup olive oil
  • 1/2 cup sesame oil
  • 4 pieces star anise

This lively marinade is excellent for red meats and pork. The marinade requires no more than 15 minutes to infuse full flavors.

Puree all ingredients except oils and star anise in blender. Add oils and star anise. Place meat or pork in a shallow pan, pour marinade over and let stand for 15 minutes. Remove meat from marinade. Refrigerate meat for one hour or more before preparing.

Pork Roast with Kiwifruit

Ingredients:

  • California kiwifruit peeled and sliced
  • 3 lbs. Pork loin roast
  • 2 tbsp. Soy sauce
  • ¾ cup Light brown sugar
  • ¼ tbsp. Fresh ginger graded
  • 3 tbsp. Fresh lemon juice
  • Slightly under-ripe bananas peeled and sliced
  • ¼ tsp. Ground cinnamon
  • Sweet red pepper thinly sliced
  • 1/4cup White wine

Pre heat oven to 325 degrees. Place pork loin roast in a shallow roasting pan in a bowl combine soy sauce, white wine and ¼ cup light brown sugar. Place roast in the oven and cook for 2 ½ hours or interior temperature 9of meat) reaches 175 degrees F, brush with sauce every 20 minutes. Place bananas in limejuice and allow to sit for 15 minutes. Combine ½ cup light brown sugar cinnamon and place atop bananas. Place bananas and peppers in with the roast for the last 20 minutes of roasting.

Serve sliced with sliced kiwifruit and bananas on top

STEAK ALA CALIFORNIA KIWIFRUIT

Ingredients:

  • California Kiwifruit peeled and diced
  • California kiwifruit peeled and sliced
  • 3-3½ lbs. Sirloin steak
  • cups Portabella mushrooms sliced
  • ½ cup Butter, margarine or olive oil
  • ½ tsp. Fresh ground pepper
  • 1 tsp. Prepared horseradish
  • 1 tsp. Worchester sauce

Cover surface of steaks with the diced kiwifruit. Let sit at room temperature for 10-20 minutes. Remove diced kiwifruit from steaks and put steaks aside, reserving the diced kiwifruit. Meanwhile heat butter, add in mushrooms, horseradish, Worchester sauce, reserved diced kiwifruit and fresh pepper until mushrooms are cooked. Salt to taste. Grill meat to desired wellness. Pour mushroom/kiwifruit sauce over steaks and garnish with fresh kiwifruit slices.

CALIFORNIA DREAMING KIWIFRUIT RIBS

Ingredients:

  • 1 cup Kiwifruit jam (recipe below)
  • 8 lbs. Beef ribs
  • Large yellow onion chopped
  • Garlic cloves minced
  • ½ cup Apple juice
  • 1 tsp. Dry mustard
  • 1 tbsp. Soy sauce
  • 1 tsp. Worchester sauce
  • ¼ cup Brown sugar
  • California Kiwifruit

Precook ribs by either baking at 350 degree oven for 30 minutes or by parboiling for 20 minutes. Prepare sauce by placing kiwi jam, onion, garlic, apple juice, mustard, soy sauce, Worchester sauce and brown sugar in a saucepan. Bring to boil reduce heat and simmer 10-15 minutes. Remove precooked ribs and rub sauce generously over ribs.

Place ribs on barbeque or in oven until they are tender. Cut ribs into individual portions and pour sauce over ribs saving some sauce for dipping. Place ribs on a large platter.

Peel and splice the 5 California Kiwifruit and arrange them around outside rim of platter. Have lots of napkins on hand.

EASTER HAM WITH KIWIFRUIT

Ingredients:

  • California Kiwifruit peeled and crushed
  • California Kiwifruit peeled and sliced
  • 6 lb. Cooked ham
  • 1 lb. Small red potatoes
  • ½ cup Real maple syrup
  • 1 can 12.5 oz. Sliced pineapple
  • 2 cups Sliced carrots
  • ¼ cup Light brown sugar

Preheat oven to 350 degrees F. In a small bowl combine crushed Kiwifruit and maple syrup, the juice from the canned pineapple (set pineapple aside) and the brown sugar.

Brush on glaze, place ham in oven covered loosely with foil for 30 minutes. Place carrots and potatoes in with the ham and brush on remaining glaze, cook for 1 hour uncovered.

Remove from oven and slice tipping slices with the Kiwifruit and pineapple.

KIWIFRUIT VEGETABLE MEDLEY

Ingredients:

  • California Kiwifruit peeled and sliced
  • Medium sweet potatoes peeled and cubed
  • 2 tbsp. Butter
  • Medium yams peeled and cubed
  • 2 cups Carrots cut into thick slices
  • ¼ cup Honey
  • 2 1/2 tbsp. Butter
  • ¼ tsp. Salt
  • ¼ cup Frozen green peas

In a baking dish place sweet potatoes, butter, yams, carrots and honey bake at 325 degrees F for 45 minutes add salt, kiwifruit and peas and return to 325 degree oven for 30 minutes. Remove from oven and top with ½ tbsp butter.

LAMBCHOPS WITH KIWIFRUIT

Ingredients:

  • California Kiwifruit peeled and crushed
  • California Kiwifruit peeled and sliced
  • New Zealand lamb chops around 1” thick
  • 1/2-cup Extra virgin olive oil
  • 1/4-cup Fresh oregano leaves chopped (or 1 tbsp. dried oregano)
  • Cloves garlic minced

In a marinade (plastic or glass) container place lamb chops on the bottom sprinkle with a oregano, garlic and cover with olive oil. Place in refrigerator for at least 2 hours (overnight for optimal results). Remove from refrigerator and cover with crushed kiwifruit let stand for 10 minutes.

Barbeque lamb chops 13-15 minutes a side (turning once)on semi-direct heat. Garnish with Kiwifruit slices serve immediately.

KIWIFRUIT AND SMOKED SALMON

Ingredients:

  • California Kiwifruit peeled and sliced
  • oz. Smoked salmon slices
  • ¼ cup Black olives whole
  • 1 tbsp. Capers
  • ½ cup Watercress
  • Romaine lettuce leaves
  • Radicchio leaves
  • 1 tbsp Extra virgin olive oil
  • Pinch salt
  • Pinch Pepper

On a large plate or serving tray place lettuce leaves, radicchio leaves and watercress flat on tray. Place salmon slices, kiwifruit slices atop leaves. Drizzle olive oil on top of salmon. Scatter olives and capers around tray. Refrigerate for 30 minutes.

Season with salt and pepper as desired.

 

CALIFORNIA KIWIFRUIT PIZZA

 Ingredients:

CRUST 

  • 1 pkg.  Duncan Heinz Golden Sugar cookie mix
  • 8 oz.  Cream cheese (softened)
  • ¼ cup  Confectionary sugar
  • 1 tsp.  Pure vanilla or vanilla 

FRUIT 

  • 3 each  California kiwifruit peeled and sliced
  • 1-1/2 cup  Fresh strawberries sliced
  • 1 cup  Canned mandarin oranges drained
  • 2 each  Bananas sliced

 

Spread cookie dough on a glass 10-1/2 inch cookie pan (better than metal but you can use metal also). Bake in a 350F oven for 13 to 15 minutes, allow cooling. 

In a bowl combine cream cheese, sugar and vanilla.  Spread over surface of cookie dough. Arrange fruit on cookie dough in alternating rings working from the outside in until cookie is covered - pour glaze over entire surface.  Place in refrigerator for 1 - 2 hours.

GLAZE

  • 3/8 cup  Sugar
  • 1-1/2 tsp.  Cornstarch
  • 3/8-cup  Water
  • ½ cup  Orange juice
  • 1/8 cup  Lemon juice

 In a glass bowl heat sugar, cornstarch, water, orange juice, and lemon juice in the microwave for 3 to 5 minutes until slightly thick.

 

GOLDEN STATE GLAZED PORK CHOPS WITH KIWIFRUIT

 Ingredients:

  • California Kiwifruit peeled and chopped
  • Pork lion chops ¾” – 1’ thick
  • California kiwifruit sliced
  • Large Yukon gold potatoes cut into ¼’ slices
  • 1/2 tbsp.  Butter
  • 1 tbsp.  Brown sugar
  • ½ cup.  Apple juice
  • ¼ cup.  Honey       

Serves 6

In a large skillet heat 2 tbsp. butter on medium heat until melted.  Pork chops in olive butter adding sliced potatoes cook on medium heat for 20 minutes turning chops and potatoes add onion and cook until onions are transparent. Remove potatoes and onions set aside. Add 1 tbsp. butter 2 kiwifruit, brown sugar, apple juice and honey to the pork chops, turning pork chops until they are coated with the glaze and all of the butter is melted and reduced. While chops are being glazed, Heat ½ tbsp. in medium skillet add potatoes and onions cook until heated thoroughly.  Remove pork chops and arrange on a platter. Remove potatoes and onions and ring outside of chops for garnish. Slice remaining kiwifruit and arrange sliced atop pork chops. Serve piping hot.
